FRESH INGREDIENTS

Honoring local produce and the dedicated individuals who cultivate it, our chef crafts dishes using fresh ingredients, slow-cooked to perfection, reminiscent of the Vizier’s era.

Our cheeses are sourced from a family-run farm situated at an altitude of 1,500 meters in Azrou. Totally homemade, their availability depend on the natural lactation cycles of the goats and sheep.

Fresh fish from the Atlantic and the Mediterranean arrives on Tuesdays, Thursdays, and Saturdays, ensuring the finest quality for our seafood offerings.

We take pride in our homemade jams, breads, yogurts, ice creams, traditional amlou, a delectable Moroccan spread made from almonds, argan oil, and honey—along, as well as all our cakes and pastries. All are meticulously prepared on-site using ingredients sourced from small local producers, reflecting our commitment to authenticity and community support.

GASTRONOMY

Our gourmet menus, inherited from the secrets of distinguished Moroccan families, change with the season, and are available by advance order. We recommend placing your order in the morning for the evening meal, allowing us to provide a comprehensive experience of Morocco’s culinary traditions.

Sanae’s cuisine aims to surprise and delight with creations that have disappeared from many Moroccan restaurant menus due to their time-intensive preparation or, in some cases, simply forgotten.

Historically, an opulent table—featuring crystal, fine porcelain, silverware, and exquisite dishes, has been integral to the Moroccan art of hospitality. In keeping with the customs of Morocco’s great families, we place significant emphasis on the art of the table.

You are welcome to place your order by email, before your arrival.

FROM VINE TO GLASS

At Mayfez, all wines served are sourced from local producers, with the exception of our champagnes.

Our wine collection showcases a diverse array of styles and flavors, aiming to surprise and delight our guests with new and memorable experiences. By offering an exclusively local selection from across Morocco—including the Fès-Meknès region, one of the country’s leading wine producers—we celebrate the rich viticultural heritage of our land.

OUR SILVERWARE

Striving for timeless elegance, our tables, at l’Odalisque, are adorned with the original M engraved silverware, once property of Marrakech’s former La Mamounia Palace.

This distinctive collection was acquired during the 2009 auction of the palace’s furnishings, held prior to its extensive renovation.

OUR TABLE WARE

Rooted in a local craftsmanship tradition spanning over a century, our porcelain is a signature creation designed and produced in a workshop in Fez. Since the 19th century, these porcelain artisans have imported kaolin from China to achieve unparalleled whiteness.

Our gold and white pattern embodies simplicity and elegance, featuring a Moroccan touch with the inclusion of the Hand of Fatima—a symbol deeply ingrained in North African culture, representing protection and blessings.
