FLAVOURS & SOUL
COOKING RITUALS AT MAYFEZ
Stepping into a Mayfez cooking class is a pleasant way of embracing the soul of Moroccan culture.
Moroccan dishes are a living art, carried by voices, gesture and memory.
For generations, Moroccan gastronomy has lived through the hands of the dadas, guardians of noble homes, keepers of values and secrets, passing down culinary wisdom from mother to daughter.
Dive into this oral culture and discover, more than a know-how, a culture.

Houssam, Chef at Mayfez
Inherited from the Dadas, this tradition now finds a new voice at Mayfez: that of Houssam, our Chef, who perpetuates its soul while opening it to modernity.
Under his watchful eye, you will craft delicacies, fragments of a timeless art of living, to be savoured and shared.
Indulge in Mayfez’ Cooking Rituals
In the intimacy of a private workshop, ancestral gestures meet the vibrant flavours of the market, secrets of the home are revealed by the warmth of the stoves, and every dish becomes a journey. Blending heritage and sharing, tradition and modernity, it is an experience savoured as much with the senses as with the heart.

RITUALS FOR ALL TASTES
Each guest will find their own path to the culinary soul of Morocco.
The simple joy of bread and crêpes in a Ritual of Sharing, the sweet sensuality of the Ritual of Sweetness, and the full adventure, from the fragrant souks to the table of Mayfez’s Odalisque, with the Ritual of Flavours.
Three worlds, three sensory journeys… and one promise: to reveal the richness of an art of living, where tradition and modernity meet.

ART & MELODIES

THE ART OF ANDALOUSIAN WEAVING
Dar al Tiraz stands as a sanctuary of passion and patience, devoted to breathing new life into Morocco’s exceptional textile heritage.
At its heart lies an invitation to explore the artistry of handwoven fabrics, a space where craftsmanship, research, and curiosity intertwine to reveal a living tradition.
Dedicated to the rebirth of Arabo-Andalusian patterned weaving, a craft born in medieval Andalusia and preserved through centuries, Dar al Tiraz is one of the rare workshops in the world still mastering the drawloom technique, safeguarding a legacy of an exceptional know-how.
Through each fabric, Dar al Tiraz pays homage to an art form that Fès inherited from Andalusia, perpetuating the splendor of one of its finest creations: the iconic Fez belts.

FESTIVAL OF SUFI MUSIC
Each autumn, Fez becomes the beating heart of a living spirituality. Within the city’s palaces, madrasas, and secret gardens, songs, poetry, and concerts celebrate the mystical heritage of Islam and its timeless message of harmony.
Between the notes of an oud and the whisper of a Persian poem, immerse yourself in the soul of Fez, where music becomes prayer, and every melody turns the light of faith into beauty.
Program of the 17th edition taking place from 18 to 25 October 2025.
FES FESTIVAL OF SACRED MUSIC
Each year in May or June, the medina of Fes resonates with a rare harmony, woven from voices from around the world. The festival transforms the imperial city into a vibrant setting for intercultural dialogue and emotion.
Established in 1994, this unique festival celebrates spiritual music in all its diversity—Sufi, Andalusian, gospel, Gregorian chants, mantras, and music from Africa, Asia, Europe, and the Americas. It is recognized by UNESCO as an event contributing to dialogue among civilizations .
Inviting to reflection and sharing through forums, literary gatherings, and exhibitions, each edition explores a significant theme: peace, spirituality, ecology, and the connection between cultures.
